Leftover Mashed Potato with Egg

It doesn't photograph well. But you can't go wrong with potatoes and egg. Reading the list of ingredients made me want to post this one and try it myself.



Ingredients
  • Eggs (1 per person)
  • Potatoes (1-2 small ones per person)
  • Cheese (any kind that you like)
  • Sour cream
  • Butter
  • Milk
  • Parsley
  • Vinegar
  • Salt (to taste)
  • Pepper (to taste)
Directions

Mashed Potatoes
Start by peeling and quartering your potatoes, then boil them until they are cooked through. Mash them in a bowl, and mix in butter, milk, sour cream, cheese, salt, and pepper. Lumps are fine in this dish as well. So you don’t have to be too precise, but you could use a ricer if you’d like a smoother mash.

Poached Eggs
Bring salted water to a boil and add a tablespoon or so of vinegar. When your water is boiling, give the pot a good stir (to create a vortex of sorts) and add your egg. Cook until the egg becomes opaque and can be handled with a spoon without breaking.
When the egg is cooked, remove it from the pot and place it on a plate (or paper towel) until you’re ready.


Plating
When everything is ready, spoon your potatoes onto your plate, then place your egg on top, and garnish with chopped parsley.

Cabbage with an Egg

An unusual breakfast, but I'd try it at least once.


  • 2 cups cabbage (julienned)

  • 1 egg

  • 1 clove Garlic

  • Parsley

  • 1 tablespoon Butter

  • 3 tablespoons White Wine


  • 1 tablespoon flour

  • ¼ to ½ cup Milk

  • Olive Oil

  • Salt (to taste)

  • Pepper (to taste)
Start by sautéing julienned cabbage in a bit of olive. Add minced garlic, season with salt and
pepper, and cook until the cabbage is thoroughly wilted.

Next, deglaze the pan with white wine, then allow it to reduce, and remove everything from the pan (just transfer it to a plate or bowl).

Next, make a quick béchamel (or you could just use cream), by meltinga bit of butter in your pan, then mix in you flour, and cook it briefly. Add your milk to the pan, and whisk everything together until it becomes a smooth sauce (you can also add more milk or water as needed).

When the sauce has come together, season with salt and pepper, then add your cooked cabbage back to the pan, and stir it into your sauce.

Finally, fry an egg, then spoon your cabbage onto a plate, place your egg on top, and finish with copped parsley.

Dumplings Recipe

Dumplings Recipe - Allrecipes.com: These quick and easy dumplings go great in stew or with chicken.



Just put together this recipe for dumplings on top of chicken soup I've had going for my brother visiting today. Never sure what time he will arrive so soup/ stew is something easy to keep ready. Dumplings on top, like the icing on the cake.
